Hummus is just so healthy and versatile and is perfect for an easy lunch box filler or picnic, as all you need to add are some freshly cut vegetables (or tortillas) for dipping. For a fresher taste and greater satisfaction, make your own instead of buying it, as it literally takes 10 minutes. I have just made some for my lunch today.
For a portion that will easily satisfy 2 -3 people you just need a small tin of chick peas which you should drain and rinse first. Then (in a food processor or blender) you can add a couple of spoonfuls of tahini, some Extra VIrgin Olive Oil, lemon, salt and pepper and whatever other flavours you fancy. Today I have used a table spoon of freshly chopped chives, a teaspoon of chopped parsley and the same of thyme, along with two cloves of garlic. Whizz it all in a blender or food processor. If it’s a bit thick then just add some more oil and do it again until you get the right consistency. For a richer taste I sometimes add a bit of sesame oil, but you can experiment with whatever flavours you like. Then just chop up your veggies and away you ago. Perfect, fresh, and you know exactly what you’re eating.
