It’s National Afternoon Tea this week and it is now so popular to treat yourself and friends/family to this delicious treat. However, it can be great fun to make your own and enjoy the treat at home, maybe with a cheeky glass of Prosecco! You can tailor it to what you really like, as I always find there’s too much sweet and not enough savoury. You can even give these mini Victoria sandwiches a try and they’re really easy to make. Use a standard cake mix, so equal quantities of sugar, butter and flour, with equal weight of eggs*. Add a drop of vanilla essence and then divide into mini cake trays. Cook for about 20 minutes at 180 celsius (until a skewer comes out clean from the centre when testing).

Once they’ve cooled remove from the trays and carefully cut in half. Place jam in the centre and pipe in some (or spread) some double cream that you’ve whipped to stand in peaks. Decorate the top as you’d like. Here I’ve piped some more cream, added a slice of fresh strawberry and dusted with icing sugar.


*Weigh the eggs beforehand to give you the quantity (2 large eggs is about right).
